- 1 onion ( medium, fi nely chopped)
- 1 tsp. sea salt ( fi ne, to taste, plus a pinch)
- 3 cloves garlic (minced)
- 4 tsp. fresh ginger ( grated)
- 1 tsp. ground turmeric
- 1 tsp. ground coriander
- 1/4 tsp. red pepper (fl akes, or to taste)
- 1 sweet potato ( medium/large, peeled and cut into 5mm to 1cm dice, 600g)
- 400 grams chickpeas (drained and rinsed, or 250g cooked chickpeas)
- 400 grams chopped tomatoes (with juices)
- 400 mL light coconut milk
- 142 grams baby spinach ( pack)
- freshly ground black pepper
