- 600 grams sweet potato (peeled and cut in 1.5cm dice [1lb 5oz])
- 1 red pepper (large, cut in 2cm dice)
- 400 grams chopped tomatoes (cans, [2 x 14oz])
- 400 grams cans black beans (rinsed and drained [2 x 14oz])
- 400 grams chickpeas (drained [14oz])
- 250 mL water ([UK 8fl oz / US 1 cup])
- 1 onion (large, finely chopped)
- 4 garlic cloves (crushed)
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1/2 tsp. ground cinnamon
- 2 Tbsp. chili powder (according to taste)
- 1 Tbsp. cider vinegar
- 2 limes
- 2 tsp. cocoa powder
- 1 tsp. caster sugar
- 3 Tbsp. olive oil
- pepper
- salt
- 1 bunch fresh coriander (to serve)
