  • 1 tablespoon olive oil
  • 1 onion (small, peeled and finely chopped)
  • 1 tablespoon tomato purée
  • 4 cups vegetable stock
  • 2 sweet potatoes (medium, peeled and cubed)
  • 1 yellow pepper (large, deseeded and roughly chopped)
  • 1 medium zucchini (cubed)
  • 1 bay leaf
  • 1 sprig fresh rosemary (plus more small sprigs to serve)
  • 1 pound beefsteak tomatoes (cubed)
  • 1 red chili pepper (small, deseeded and finely chopped)

    Directions

    1. Heat the oil in a saucepan and cook the onion until golden. Add the tomato purée and cook 30 seconds. Pour in the stock and bring to a boil. Add the sweet potatoes, pepper, zucchini, bay leaf and rosemary and simmer 15 mins. Add the tomatoes and chili pepper and simmer 5 mins. Serve in bowls with the extra rosemary sprigs.
