This was very good. Only thing to mention is that I question whether the cherry tomatoes should be in there whole or not. If I do it again, I’ll at least cut them in half. They didn’t “dissolve” like I thought they would. Definitely one to make again regardless.
Update: made this again with a 1 cup regular tomato diced as well as another cup of canned diced tomato and that was better than whole cherry tomatoes. Also used fresh ginger. Great.

I Loved this recipe and will make it often. I used 1 tsp of hot curry and 1 tsp of sweet curry, both Penzeys, ( and very good). And I skipped the sugar since the coconut milk I use is sweet enough. Also used canned no-salt added diced tomatoes instead of fresh.

It was delicious. Lots of flavour and spice , really good if you have a cold or you love curry like me ..
