- 1 can light coconut milk (*, or half a can of full-fat coconut milk diluted with half a can of water)
- 2 cups spinach (tightly packed)
- 1 cup quinoa (cooked according to package directions, optional)

I changed this up but not until I had completed the dish almost as written. I was leery of the prunes but that is what made this so delish. I had butternut squash instead of sweet potatoes but cooked that separately. I also added chick peas for protein. While all the other ingredients were in the pan it looked too dry for me, no sauce. I wanted to put it over rice or quinoa. After tasting it (YUM) I decided to add a half cup of water and a half cup of canned (full-fat) coconut milk. Sooo good. Then decided to go Indian (not spicy) to add even more flavor. Added curry, garam masala, touch of cinnamon and cumin. Also needed s&p. I could have eaten the whole thing. It's a lot of liquid, you could do less, but I loved it poured over the quinoa & veggies. Wish I had had some Nan or pita bread! Soooo good! (But warning, we did get a bit gaseous later.

This was a hit! I followed the directions, but ended up adding more spice when reheating leftovers.
