- 1 yellow onion (large, thinly sliced)
- 2 chorizo sausages (vegan, crumbled, I strongly recommend Field Roast Mexican Chipotle sausages--I hate all the over-processed soy meat products)
- 1 bunch kale (chopped)
- salt
- pepper
- 1/2 cup brown rice
- 1 tsp. olive oil
- 1 Tbsp. fresh lime juice
- 2 Tbsp. cilantro (chopped)
- canned black beans (or 1 1/2 c. cooked, warmed)
- 1 tsp. spanish paprika (smoked)
- 1/2 cup salsa (a sweet or smoky salsa would work well)
- 4 whole wheat tortillas (warmed)
