- 2 poblano peppers (1/2 inch diced)
- 1 cup red onion (1/2 inch diced, about 1 medium onion)
- 1 Tbsp. cumin seeds (whole)
- 1/8 tsp. cayenne pepper
- sea salt (to taste)
- 12 tortillas (soft, I like blue corn tortillas with this recipe)
