- 4 limes (fresh, separated)
- fresh cilantro (Optional toppings:, jalapeno, cherry tomatoes, sweet peppers)
- 1/2 cup sour cream (I use fat free)
- 1 tsp. hot sauce (like Cholula)
- 2 limes (large, 1/2 teaspoon zest + 3 tablespoons juice)
- 1 cup quinoa (or rice, + 2 cups water)
- 1 Tbsp. butter
- 1 lime (large, 2 tablespoons juice and 1 teaspoon zest)
- 1/3 cup chopped cilantro (finely)

super super yummy! even my picky partner loved it (but i admittedly added chicken to his). highly recommend serving over rice instead of quinoa

It was amazing! Even my carnivorous boyfriend loved it! I adjusted the spices so there wasn’t as much heat and I am glad I did. Flavorful and filling!

Very tasty!! I actually used left overs I had from sweet potatoes and onions and beefy taco rice casserole, then added brown rice and black beans an avocado chucks. Worked out really well !

Family def. enjoyed tonight’s dinner. The only thing I didn’t add was chipotle and swapped the sour cream with non fat plain yorgurt .

Turned out really good. The sweet potatoes were the star of the dish. I added a tiny bit of honey to the sauce, as it was a little too tangy for me something worth trying if you want to cut the tangyness. Would make again.

Turned out great!! I added some sausage, sautéed kale, onions, and yellow bell pepper as toppings.

Wow, great recipe! Healthy but fun for making for friends or family because everyone can choose their toppings. I’d say the best thing about this recipe is the sweet potato spice mix. Flavors are amazing and you don’t feel guilty eating it. My friend was running late so I kept the potatoes in the oven extra long (baked in a big cast iron pan) and they browned-carmalized and it made the dish even better!

Loved, loved this recipe! Soooooo flavorful. (Used fresh corn as I don’t like canned goods)
