A wonderful recipe. I served to my Bible study ladies and got rave reviews. I followed the recipe but used a whole onion, a total of 12 large eggs, maple pork sausage and 1/2 cup of full fat coconut milk. I prepared everything the night before, then in the morning I put the mixture in a lightly greased casserole dish and baked as directed. The top of the casserole was starting to get burnt about 35 minutes into the baking, so I lowered the heat to 375 degrees and continued baking until the eggs have set. With the full amount of coconut milk I used in the recipe, there was not the strong coconut flavor that I expected. Super easy and delicious. This recipe is going to be staple in our household and will be served in many church functions.
