I was a bit intimidated to make an almost all vegetable dish because my husband doesn’t like them, but he and I thought it was truly tasty! I call that a HUGE win.

Turned out great i used Harvest blend sauce from Trader Joe’s instead of marinara sauce- i love the flavor with the sweet potatoes

I think I should have cooked it with the foil on a little longer, my noodles turned out al dente. Otherwise it was very good.

Third time making this, I have tweaked it a lot. There is more potato (590g), which I blanch before putting it into the casserole dish. I also prefer plain ground turkey rather than spicy turkey sausage. I substitute in all sorts of tomato-based sauces for the marinara, and I have used sour cream and plain greek yogurt in place of the ricotta, based on what is open in my fridge. It's a very flexible recipe as long as you watch the liquid content to ensure it's not too wet or dry to bake nicely. Still a great recipe to start from!
