- 2 tsp. cumin seeds
- 1 tsp. black mustard seeds
- 1/2 tsp. fennel seeds
- 1/2 tsp. coriander seeds
- 1 sweet potato (large, scrubbed, unpeeled, and grated, about 2 ½ cups)
- 1 red onion (small, thinly sliced)
- 1 red chile (long, thinly sliced, depending on how hot you like it)
- 1/2 tsp. cinnamon
- 1/2 tsp. kosher salt
- freshly ground pepper
- 1 tsp. baking powder
- 1/2 cup chickpea flour (also known as besan)
- 1/4 cup cornmeal (finely ground)
- oil (for frying)

- 2 Tbsp. pumpkin seeds (lightly toasted)

- 2 Tbsp. orange juice (freshly squeezed, or more to taste)
