- 4 Tbsp. unsalted butter (Kerrygold grassfed)
- sea salt (pink himalayan is best)
- thyme (can use other herbs or seasoning, like rosemary or all seasoning)

Directions
- peel sweet potatoes and chop into large cubes
- place into a pot with water and boil until very soft (~15-20 min)
- place in food processor with butter, sea salt (~12-15 grinds) and herb (start with 1 tbsp.)
