- 1 sweet potatoes (large or 2 medium, baked. Makes about 3 cups)
- 2 cups cooked quinoa (1 cup of uncooked quinoa yields 2.25 cups when cooked.)
- 2 cups kale (finely chopped., I used Dinosaur Kale which is pictured above, any flat kind kale will work.)
- 2 eggs
- 1/2 cup panko
- 3 tsp. cornstarch
- 1 tsp. ginger (grated, didn't use)
- 1 smoked paprika (good pinch)
- 1 tsp. freshly ground black pepper
- 1 tsp. kosher salt
- 6 Tbsp. peanut oil (to pan fry them.)
