  • 1 sweet potatoes (large or 2 medium, baked. Makes about 3 cups)
  • 2 cups cooked quinoa (1 cup of uncooked quinoa yields 2.25 cups when cooked.)
  • 2 cups kale (finely chopped., I used Dinosaur Kale which is pictured above, any flat kind kale will work.)
  • 2 eggs
  • 1/2 cup panko
  • 3 teaspoons cornstarch
  • 1 teaspoon ginger (grated, didn't use)
  • 1 smoked paprika (good pinch)
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon kosher salt
  • 6 tablespoons peanut oil (to pan fry them.)
