Not your typical Breakfast Frittata! I was wanting a not-your-typical brunch dish, so what better way to have something new than to mix up some new flavors? This blend of sweet and savory hit the spot. Delicious, nutritious and easy to make!! Added bonus? Gluten Free!
Ingredients

- 6 large eggs
- 1 cup coconut cream (So Delicious Culinary)
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 cups sweet potatoes (1/2 - 3/4 inch cubed)
- 2 Tbsp. olive oil
- 2 cups kale (firmly packed chopped)
- 1/2 red onion (small, chopped)
- 2 garlic cloves (minced)
- 3 oz. goat cheese (crumbled)

Directions
- Preheat oven to 350 degrees
- Whisk together eggs, cream, salt and pepper
- In a 10 inch oven proof skillet over medium heat, saute sweet potatoes in 1 tablespoon hot oil for 8 to 10 minutes or until potatoes are tender and golden.
