- 1 medium onion (any type, sliced into 1/4” slices)
- 1 sweet potato (Large, peeled and 3/4” cubed)
- 15 oz. black beans (drained and rinsed)
- 1 tsp. cumin (Groud)
- 1 tsp. smoked paprika
- 1 lime
- 5 Tbsp. olive oil (divided)
- 7 oz. greens (I used arugula, but you can use any type you like)
- cheese (Shaved Parmeggiano Reggiano, Optional)
