- 1/4 cup tahini (or sesame seeds)
- 1/4 cup cocoa powder (or chopped unsweetened chocolate)
- 1 onion (large, cut into large chunks)
- 1 head garlic (cloves separated and peeled)
- 4 plum tomatoes (canned are fine)
- 2 slices white bread (thick, stale is fine)
- 4 cups vegetable stock (or water, plus more as needed)
- 1/4 cup vegetable oil (good-quality, plus more for frying)
- 4 bay leaves (3 or)
- 1 cinnamon stick
- 2 Tbsp. ground cumin
- 1 Tbsp. ground allspice
- 2 tsp. anise seeds

- brown sugar (optional)
- 24 corn tortillas (small, plus more if any break)
- 4 cups sweet potatoes (cooked, mashed, and seasoned)
- 1/2 cup queso fresco (crumbled, for garnish, optional)
- 1/2 cup red onion (chopped, or scallions for garnish, optional)
- 1/2 cup chopped fresh cilantro (for garnish, optional)
