- 2 sweet potatoes (large organic, washed, dark parts and "eyes" trimmed off, cut into large bite-size pieces)
- 2 potatoes (medium organic, white or yellow flesh, washed, dark parts and "eyes" trimmed off, cut into bite-size cubes)
- 3 organic carrots (medium, washed, ends cut off, julienned or sliced)
- 2 onions (medium organic, peeled and minced)
- 1 sweet pepper (large organic, colour of your choice, washed, thinly sliced, lenghtwise)
- 3 garlic cloves (organic, peeled and minced)
- 2 green beans (big handfuls of organic, I used frozen ones, that I had blanched and put in the freezer myself last summer)
- 1 lemon (organic)
- 2 diced tomatoes (BPA-free cans, 398 ml/14 oz organic)
- 1 chickpeas (BPA-free can, 398 ml/14 oz organic, rinsed)
- 160 mL organic coconut milk (NOT the reduced fat kind)
- 1/2 cup water (spring or filtered, or broth if you prefer)
- 1 tsp. curry powder (organic, if you like it spicier, add an extra ½ tsp)
- 1/2 tsp. garam masala (organic, powder)
- 1/2 tsp. paprika (organic)
- 1/2 tsp. turmeric (organic)
- 1/4 tsp. cayenne powder (organic, this will be mild, if you like it spicier, add another ¼ - ½ tsp extra)
- 1 tsp. sea salt (fine grey)
- 1/8 tsp. black pepper (freshly ground organic, or to taste)
- cilantro (fresh organic, for garnish and taste, optional)
