- 1/4 cup coconut oil (measured when solid)
- 1/2 cup diced yellow onion (1 large onion)
- 1 cup carrots (diced, ~2-3 large carrots)
- 1 red pepper (diced)
- 2 Tbsp. minced garlic (EACH: finely, finely minced ginger, ~4-5 cloves; 2-inch piece of ginger)
- 2 Tbsp. red curry paste (I use Thai Kitchen)
- 1 Tbsp. ground turmeric
- 1/2 tsp. ground cumin (EACH:, and ground coriander)
- 1/4 tsp. red pepper flakes
- fine sea salt
- freshly cracked pepper
- 1 Tbsp. white granulated sugar
- 2 cans chickpeas (15 oz., 425g EACH, garbanzo beans, drained and rinsed)
- 2 cups sweet potatoes (peeled & diced, 1/2-inch dice, ~1-2 large potatoes)
- 2 cups vegetable stock (I recommend Swanson)
- coconut milk (2 13.5 ounces, 400mL EACH regular, full fat)
- 3 cups kale (thinly sliced)
- lime juice (optional)
- cilantro (optional)
- cashews (optional)
- naan bread (Serve with: toasted)
