- 2 cups black beans (cooked)
- 1 cup mirepoix (1/3 cup onions - 1/3 cup carrots - 1/3 cup celery)
- 2 1/2 chili powder
- 1/4 tsp. ground coriander
- 1 tsp. ground cumin
- 3/4 tsp. granulated garlic
- 1 cup diced tomatoes
- 1 lime
- 1/2 cup greek yogurt
- 1/2 lb. jicama (peeled and cut into sticks)
- 7 sprigs fresh cilantro
- 3 scallions
- 1 cup cheddar cheese (grated)
