- 1 sweet potato (medium-small, big enough to yield 1/3 cup mashed potato)

- 2/3 cup buttermilk (I used 2% fat buttermilk)
- 2 Tbsp. honey (orange-flavored is wonderful)
- 1 tsp. ground cardamom
