Description
Sometimes called noodle pudding, our quintessential dairy kugel harkens back to tradition for an easy, not-quite dessert that's as sweet and comforting as a warm hug. You can vary the dairy for a richer or leaner version, and add dried fruit if you like. Adjust the baking time to achieve the crunch you prefer on the noodle edges. The recipe is a Yummly original created by Miri Rotkovitz.

- 4 Tbsp. unsalted butter (melted, plus extra for the pan)
- 12 oz. wide egg noodles (or extra-wide)
- 2 cups cottage cheese (16 oz.; or ricotta cheese, preferably whole milk, or farmer's cheese)
- 2 cups sour cream (16 oz.; or Greek yogurt, preferably whole milk)
- 4 large eggs
- 2/3 cup sugar (for kugel)
- 1 1/2 tsp. vanilla extract
- 1 1/4 tsp. ground cinnamon (divided; for kugel and topping)
- 1 cup raisins (golden, brown, or a mix; or use tart dried cherries or chopped dried apricots; optional)
- 1 Tbsp. sugar (for topping)

Directions
- Preheat oven to 350°F. Butter a 9x13-inch baking dish or similarly-sized casserole dish. Set aside.
- Bring a large pot of water to a boil. Add noodles and cook until barely tender to bite (al dente), 6-7 minutes. Drain and transfer back to the cooking pot (off the heat). Add remaining 4 Tbsp. melted butter and stir well to coat.
- For the smoothest custard, in a blender, puree cottage cheese, sour cream, eggs, 2/3 cup sugar, the vanilla, and 1/4 tsp. cinnamon until smooth, scraping down the sides as needed, about 1 minute. Or, for a less smooth, more rustic texture, whisk ingredients together in a large bowl.
