- 2 Tbsp. butter
- 3 leeks (thinly sliced, white and light green parts only)
- 2 red bell peppers (chopped)
- 1 onion (large, chopped)
- 1 1/2 Tbsp. garlic (minced)
- 1/4 cup flour
- 8 cups low salt chicken broth
- 4 cups butternut squash (cubes, peeled and seeded, about a 2lb squash)
- 4 cups russet potatoes (cubes, peeled, about 1 ½ lbs potatoes)
- 2 Tbsp. fresh thyme
- 4 cups corn kernels (fresh or frozen, thawed, 6-8 ears fresh corn)
- 1 cup heavy cream
- 4 cups rotisserie chicken (cubed, white and dark meat, skin removed)
- 1 cup sliced green onions (thinly, plus more for garnish)
- 2 Tbsp. fresh cilantro (chopped for garnish, optional)
