- 1 Tbsp. baking powder (I prefer sodium free, gluten free baking powder from HAIN Pure Foods Featherweight)
- 1 Tbsp. cinnamon powder
- 1 1/2 cups coconut sugar (or date sugar)
- 1 pinch salt
- 3 eggs
- 1 Tbsp. vanilla extract
- 1 cup coconut oil (melted)
- 1 1/4 cups coconut milk (add 1/2 cup more if you want the waffles to be less firm and more fluffy)
- 1/2 cup raisins (dark, optional)
