- rice (Freshly Cooked Hot, *Japanese short grain rice)
- sushi vinegar
- cook rice (*Note: For sushi, with slightly less amount of water to achieve firmer texture. See ‘How to cook rice for Sushi’)
- 5 cups uncooked rice (180ml cups)
- 120 mL rice vinegar
- 100 grams sugar
- 2 tsp. salt
- sugar (*This is my family’s recipe, but naturally you can alter it to suit your taste, by adding more, or vinegar or salt. But my family recipe should be just right. I remember the ratio as ‘1-2-1-2’.)
- 1 cup uncooked rice (180ml cup)
- 25 mL rice vinegar (*5 teaspoons)
- 20 grams sugar (*4 teaspoons)
- 1/2 tsp. salt (*2ml)
