- 1 Tbsp. sunflower oil (or any other neutral vegetable oil)
- 1/2 Tbsp. refined coconut oil (liquid, can be subbed with more vegetable oil)
- 1/4 cup cashews (chopped coarsely so there’s still some texture)
- 1 cup button mushrooms (frozen sliced, defrosted, squeezed and chopped finely, or use fresh mushrooms)
- 400 grams chickpeas (can cooked, rinsed very well)
- 1/4 tsp. kala namak (fine, black salt)
- 1/2 stock cube (big veggie, crumbled)
- 1/2 cup sherry (don’t omit!)
- 1/2 Tbsp. capers (don’t omit!)
- 1 Tbsp. low sodium soy sauce (or tamari to make it gluten-free)
- 1/2 tsp. dried thyme
- 1/2 tsp. dried sage
- 1/2 small onion (very, diced very finely)
- 1 clove garlic (grated finely, don’t omit!)
- 2 Tbsp. nutritional yeast
- 1/2 cup panko breadcrumbs (gluten-free panko can also be used)
- 1 handful frozen blueberries (keep frozen until use, or use fresh ones)
- Dijon mustard (to top, optional)
