- 1/4 cup unsalted butter (melted and cooled slightly)

- 4 large eggs (room temperature and lightly beaten)
- 2 tsp. vanilla extract
- 2 tsp. unsulphured molasses
- 1 1/3 cups cooked carrots (pureed, from about 1 lb. 2 oz. raw)
- 8 oz. crushed pineapple (can of, drained, about 3/4 cup after draining)
- 1 cup walnuts (or pecans, optional)
- 3/4 cup sweetened flaked coconut (optional)
- 2 tsp. ginger (freshly grated, optional)
- 1/2 cup raisins (optional, is using, reduce sugar to 1 2/3 cup)
- 16 oz. cream cheese
- 3/4 cup butter
- 2 tsp. vanilla extract
- 7 cups powdered sugar
