- coconut oil
- eggs

- 1 cup raisins (chopped if desired)
- 1 medium sweet potato (small/, peeled and grated, 2 c)
- 6 oz. spinach leaves
- 2 cups blueberries (frozen work great, no need to thaw)
- 1 cup granola (nutty, OR you may sub equal parts oats and chopped nuts)
- 2 cups whole wheat self rising flour (the recipe can be found here.)
- 1 Tbsp. ground cinnamon
- 1/2 cup honey
- 1/2 cup coconut oil (melted and cooled)
- 2 eggs
- 1 Tbsp. vanilla
