- 1 shallot (large, or 1 small onion)
- 1 garlic clove
- 1 1/2 Tbsp. olive oil
- 2 1/4 cups water
- 1/2 bouillon cube
- 4 Tbsp. coconut milk (from the can*, see notes)
- 1 tsp. salt
- 1/2 tsp. cumin
- 1/8 tsp. curry (I used mild curry powder)
- 1 pinch nutmeg (and pepper)
