- 2 medium eggs (beaten)
- 2 cups all purpose flour
- 1 cup milk
- 1/2 cup SunButter® (any smooth variety)
- 1/4 cup sugar
- 2 Tbsp. butter (melted)
- 3 tsp. baking powder
- 1 tsp. salt

Directions
- Heat oven to 400°F.
- Place paper liners in cups of muffin pan or grease each cup and set aside.
- In large bowl sift together flour, sugar, baking power and salt; set aside.
- In small bowl combine eggs and milk, stir with fork to blend. Add SunButter and continue blending until smooth, then pour into flour mixture along with melted butter. Stir until flour mixture is moistened. Do not over mix.
- Fill prepared muffin pan cups about two-thirds full and bake for 25 minutes or until toothpick inserted into center of muffin comes out clean.
