- 2 chicken breasts (medium, approx. 1 pound sliced horizontally through the equator, pounded to an even thickness)
- 4 cups warm water (optional for brine)
- 1/4 cup kosher salt (optional for brine)
- 2 1/2 Tbsp. oil (from sun-dried tomatoes divided)
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 lb. cellentani (or pasta of choice)
- 1 Tbsp. oil (from sun-dried tomatoes jar)
- 2 Tbsp. unsalted butter
- 1 shallot (large, chopped, about 1/2 cup)
- 4 oz. sun-dried tomatoes in oil (rinsed, chopped into strips, 1 heaping cup)
- 4 garlic cloves (minced)
- 1/4 tsp. red pepper flakes
- 3 Tbsp. all purpose flour
- 1 1/2 cups low sodium chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 2 tsp. chicken bouillon
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. dried parsley
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3/4 cup freshly grated Parmesan
- 1/3 cup shredded mozzarella cheese
- 2 cups spinach (roughly chopped, optional)

Amazing! Great taste and very rich and hearty. I only disagree with ‘ready in 30 minutes’ - takes that long just to prep.
