- 1/2 tsp. freshly ground black pepper (medium grind)
- 1 lb. short pasta (such as casarecce)
- 1 lb. frozen artichoke hearts (thawed and quartered*)
- 2 Tbsp. olive oil
- 1/2 cup shallots (chopped)
- 3 Tbsp. capers (drained)
- 1/2 cup sun dried tomatoes (cut into thin strips)
- 1/2 tsp. crushed red pepper flakes (optional, if you want the pasta to have a kick)
- 2 oz. toasted pine nuts
- 1/4 cup flat leaf parsley (chopped)
- 1/4 cup fresh basil (chopped)
- 1/2 cup pecorino romano (shaved, plus additional)
