- 2 cucumbers (peeled, seeded, and diced)
- 3 tomatoes (medium, diced, I also like to remove the seeds)
- 1/4 red onion (diced)
- 3/4 lb. pasta (I love using tiny bow ties or orzo)
- 2 Tbsp. red wine vinegar (add more to taste - I usually do)
- 3 Tbsp. lemon juice
- 1 Tbsp. pesto (optional, but if you have a jar in your fridge I definitely recommend using it!)
- 1 tsp. honey
- 3 Tbsp. olive oil
- salt
- pepper
- mint (optional)
- feta (optional)
