- roll (precooked Trader Joes Polenta, cut into 1/2 inch cubes)
- 5 handfuls veggies (fresh, I used 1 zucchini, 8oz sliced mushrooms, 1 bell pepper, snow peas, shredded carrots, a little spinach and some green onion, but use what you have on hand)
- 3 cloves garlic (minced)
- 4 Tbsp. olive oil
- cheddar cheese (Goat Milk, cut into small chunks, Trader Joes!)
- avocado
- 1/2 tsp. ginger
- 1 tsp. turmeric
- 1 tsp. curry powder
- 1/4 tsp. chili powder (or red pepper flake, optional)
- 1 pinch sea salt (and freshly ground pepper)
- 1/2 cup olive oil
- 1 lemon (or lime)
- 1 cup cilantro leaves (fresh Mexican)
- 1 clove garlic
