- 1 cup grape tomatoes (Cherubs or other sweet, cut in half)
- 1/4 cup orange bell pepper (chopped)
- 2 green onions (chopped)
- 8 oz. marinated artichoke hearts (drained)
- 1/3 cup edamame (shelled, cooked)
- 1 1/2 cups chicken (cooked chopped)
- 1 clove garlic
- 1/2 cup basil leaves (packed tightly)
- 1 Tbsp. pine nuts
- 2 Tbsp. shallot (roughly chopped)
- 2 Tbsp. champagne vinegar
- 1 tsp. Dijon mustard
- 1/4 tsp. ground pepper
- 1/4 tsp. sea salt
- 4 Tbsp. olive oil
- 2 Tbsp. fresh herbs (chopped, I use basil, oregano and Italian parsley)
