- 4 summer squash (I mixed squash and zucchini, chopped into 1 – 1 1/2 inch pieces)
- 1/4 cup red onion (finely chopped)
- 6 oz. prosciutto (thinly sliced)
- 4 oz. smoked gouda (chopped into 1-inch pieces)
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 4 Tbsp. white balsamic vinegar
- 1 1/2 Tbsp. extra-virgin olive oil
- 3 1/2 tsp. Dijon mustard
- 1 tsp. fresh rosemary (finely chopped)
