- 1 Tbsp. smooth peanut butter (natural or creamy no-stir style)
- 1 tsp. mirin
- 1/8 tsp. fresh grated ginger
- 6 oz. vermicelli noodles (170 g , thin Asian rice)
- 12 rice paper wrappers (8 1/2-inch, 22 cm)
- 18 large shrimp (26/30, cooked, peeled and deveined, cut in half lengthwise)
- 12 oz. firm tofu (340 g ,drained, cut into 1/4 inch (6 mm) thick slabs about 11/2 inches (4 cm) wide by about 4 inches (10 cm) long)
- 12 leaves red leaf lettuce (washed and dried)
- 1 bunch cilantro (several leaves and sprigs washed and dried)
- 1 bunch mint (several leaves washed and dried)
- 1/2 English cucumber (or hothouse seedless cucumber, ends discarded, partially peeled, seeded and sliced into 4-inch (10 cm) julienne strips)
- red cabbage (thinly sliced)
- 2 bunches scallions (about 12, green parts only)
