This is a great summer side dish! Does take longer to prep than I expected by the time I chopped everything up.

The recipe takes longer than expected due to prep and refrigerating. I combined the curry and lime juice with a little olive oil to try to make it go further but even that wasn’t enough. Helpful hint-mixing it all on a large plate with sides, helped with the spread of the “sauce”. I drizzled it over the plate of food. Overall the salad was delicious. Will make again but prep the quinoa the night before like I did the first time AND prep some of the other ingredients too. We added shredded baked chicken to make it more a meal than a salad. This fed 3 adults with a tiny left over for my lunch the next day.

Delicious just the way the recipe states. It would be a great healthy side dish with any meat or fish.

this was so good!!! great leftovers too. easy to make and fresh light and healthy!!! my new favorite side dish! made it for thanksgiving and for a brunch. i just doubled to recipe. used broth the second time.

This was a lovely fresh salad. Next time I make it, I might try cooking the quinoa in broth instead of water and may also whisk a little olive oil in with the lime juice as the lime juice is the only liquid in it and I thought it was just a tad dry. But it was still very delish - definitely a keeper!

You can't tell it has curry powder in it. It really surprised a couple of friends with how flavorful this was. Great to pack for lunch.

unbelievable salad, had it at a friends this summer and have made it twice since, making it for a family bbq tomorrow
