- 1 white onion (medium sweet, halved and sliced into half moons)
- 4 Tbsp. ghee (or coconut oil)
- 2 cloves garlic (peeled, crushed, and minced)
- 1 cup white wine
- 2 peppers (purple, any pepper will do, deseeded & sliced lengthwise)
- 3/4 lb. okra (fresh, tops removed and sliced into 1 inch rounds)
- 12 oz. plum tomatoes (whole & peeled)
- 1 cup lentils (blue, soaked for at least 3 hours, and drained)
- 2 cups water (or unsalted vegetable stock)
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. coriander seeds (whole, crushed in a mortar)
- 1 habanero (small dried, deseeded, stem removed and chopped finely)
- 1 tsp. coconut sugar
- 1/2 tsp. fresh oregano (chopped roughly)
- 1/2 tsp. fresh thyme (chopped roughly)
- 1/8 tsp. fresh rosemary (chopped roughly)
- 1/2 cup sorghum flour
- coarse sea salt (to taste)
- lime (halves, to serve)
