It was super delicious! It doesn’t keep well in the fridge except maybe next day, otherwise it gets a bit soggy and slimy. Otherwise, super yummy!

I added a little olive oil, balsamic, and feta, as recommended, and it was really good. I also did not include the portobello mushrooms. It just seemed a little off in the colorful salad.

Really good, but I recommend cooking the zoodles. I personally just like less crunchiness to my zucchini. Otherwise, delicious!

This was wonderful! Added a little olive oil like the previous reviewer reccomended and it was awesome. Definitely could add olives, shimp or feta to change it up or use a balsamic vinegarette as the dressing.

By itself it was not substantial enough and had too much acid in it, so I added some good olive oil, and a bit of feta cheese to round out the flavor and add some body. Would be a complete meal with some grilled shrimp or protein on it, but not by itself.
