- 1/2 bunch shungiku (* or rocket, arugula)
- 1/4 chinese cabbage
- 500 grams tofu (1 lb 2 oz)
- 600 grams beef (1 lb 5 oz sliced)
- 4 eggs (extra-fresh organic)
- 200 mL dashi (3½–7 fl oz, see below for recipe)
- 2 packets udon noodles (pre-cooked)
- 100 mL soy sauce
- 100 mL sake
- 3 Tbsp. raw sugar
- 1 liter water
- 10 grams seaweed (kombu)
- 10 grams katsuobushi (dried bonito flakes)
