Description

  • 1 kilogram pork loin
  • 2 yellow onions
  • 4 garlic cloves
  • 100 grams sugar
  • 1 teaspoon fresh ginger (grated)
  • 1 cup black soy sauce
  • 1 teaspoon oyster sauce

    Directions

    1. Cut the pork into thin strips. Finely chop the onion and mince the garlic.
    2. Caramelize the sugar in a pan with some water. Once the caramel has become golden, add the meat and stir over high heat for 2 to 3 minutes. Remove the meat with a slotted spoon (the meat may stick to caramel: this is normal and will disappear) and let the juice evaporate a little. Add onions and garlic and brown for a minute. Put the meat back in the pan and add the ginger, oyster sauce, and soy sauce. Mix and cover tightly. Cook over low heat for 1 hour.
    3. Serve with white rice.
