Description
Glazing and then roasting portobello mushrooms at high heat intensifies their flavor and texture, creating a perfect base for this vegetarian-friendly main dish. Look for large portobello mushrooms that have dry undersides and firm, deeply curved edges rather than flat caps. They'll be less likely to flatten out when roasted and will make a better base for the cheesy, Italian-style panko filling. You can put together the mushrooms up to 2 days in advance and pop them into the oven at the last minute, so they’re a great meal prep option for busy weeknights. Ingredients
- 4 portobello mushrooms (large, about 5 inches in diameter, with deeply curved edges rather than flat caps)
- 5 Tbsp. extra-virgin olive oil (divided)
- 2 Tbsp. balsamic vinegar
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 small yellow onion
- 1 cup cherry tomatoes (about 6 oz.)
- 2 garlic cloves
- 1 tsp. Italian seasoning
- 1 cup panko breadcrumbs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 8 fresh basil leaves (large)
Directions
- Preheat oven to 450°F. Line a sheet pan with aluminum foil.
- Twist mushroom stems to remove them from the caps. Chop stems and set aside. Use a spoon to gently scrape the dark gills from the underside of the mushrooms, and discard. Set mushroom caps on the prepared sheet pan.
- In a small bowl, 4 Tbsp. olive oil, the vinegar, salt, and pepper. Brush half of mixture all over mushrooms. Set remaining vinegar mixture aside. Arrange mushrooms on pan with undersides down.
