- 3 dried ancho chile (seeds and stem removed, crumbled)
- 3 pasilla negro (dried, chilies, seeds and stem removed, crumbled)
- 3 cups water
- 1 cup prunes (seedless)
- 1 large onions (diced)
- 5 garlic cloves (smashed)
- 2 tsp. chili powder
- 2 tsp. cumin (ground or seeds)
- 1 tsp. coriander (ground or seeds)
- 3/4 tsp. canela
- 2 cans chipotle peppers (plus 1 tablespoon adobo sauce, the juice from chipotle can)
- 1 1/2 tsp. salt (more to taste)
- 1/4 cup peanut butter (or sub tahini, almond butter, cashew butter)
- 1 oz. bittersweet chocolate (dark)
- 6 poblano peppers (large, roasted, blackened or charred)
- 1 cup cooked quinoa (or rice)
- 1 cup black beans (cooked)
- salt (to taste)
- pepper (to taste)
- 1/2 tsp. cumin (and coriander)
- 6 Tbsp. goat cheese (you can leave this out, but it adds nice creaminess, optional)
- toasted sesame seeds (garnish, cilantro)
