- 3/4 cup red bell pepper (chopped, a little over 1/2 of a medium)
- 3/4 cup chopped green bell pepper
- 2 cloves garlic (minced)
- 29 oz. petite diced tomatoes
- 15 oz. tomato sauce
- 1 beef broth (14.5 can)
- 2 1/2 Tbsp. fresh parsley (chopped, plus more for garnish)
- 1/2 tsp. dried basil
- 1/4 tsp. dried oregano
- 1 cup brown rice (or uncooked long grain white, I've tried and like both)
- cheddar cheese (for serving, optional)

This is a simple, hearty and tasty dish. Great for a cold fall day. I added chili powder and paprika, at least 3 tsp each and increased the basil and oregano.

Instead of ground beef I used 1/2 lb ground turkey meat and 1/2 lb mild chicken sausage (have to take out of casing). Instead of beef stock I used chicken stock. I used a little more then they asked for to make it more soupy. I also used a yellow pepper and red pepper. I don’t like green. We all loved it and it’s pretty healthy. It was delicious.

I used this recipe as a guide line. Made a few changes based on what we had on hand, dropped the parsley and added fresh basil and onion powder, substituted chicken for beef broth. Used tomato paste and fiesta blend cheese instead. My little one loved it, hubby loved it. His co workers loved it, got requests for more and the recipe. Best response I've ever had for a recipe. Will make again.

Really easy to throw together and even my little ones love it. I make it in the instant pot most of the time!

Really good and pretty simple to make! Added some garlic powder and chili powder for flavor Came out great

Turned out good, easy steps to follow I will make again. The rice soaked up a lot of the broth so I would just add more as I warmed it. You can leave it as is and it’s more like a chili still delicious just not soupy

The soup is quite good. I added some cumin and Greek seasoning to it. I would make it again. I make corn bread to go with soups usually since we like it better than crackers.
