I liked the soup. I did change it a little. I didn't have enough rice, so I cooked up some quinoa and used that. I stirred it into the soup before serving. Since there's only two of us, I had a lot left over. I plan to freeze part of it for future use.

I loved it. I am making it again right now. I like my vegetables a little more cooked, so I cooked the onion and the peppers for 5 minutes first. Then I added the meat.
