This is the fourth or fifth time making this meal. Always a hit and reheats well for lunch the next day if there are leftovers 😃

This is absolutely delicious! Much more economical to use 2 peppers than buying and stuffing a pepper per person. I made the rice in vegetable broth in order to give it even more taste.
