- 1 white onion (small)
- 2 garlic cloves (chopped finely)
- 1 tomato (medium-sized, seeded and chopped)
- 1 Tbsp. tomato paste
- 1 tsp. ground cumin
- 1 tsp. pepper flakes (Aleppo, see notes below)
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/2 cup Tahini
- orange (optional)
- salsa (pomegranate, for serving, optional)
- cilantro leaves (finely chopped, for garnish, optional)
- 3 blood oranges (medium, or substitute navel or cara cara oranges peeled, seeded and chopped into 1/4-inch pieces)
- 2/3 cup pomegranate seeds
- 1 cup roasted beets (peeled and chopped, cut into 1/4-inch pieces)
- 1 serrano pepper (small, or fresno, seeded and chopped finely)
- 1 garlic clove (chopped finely)
- 1 tsp. honey
- 1 tsp. olive oil
- 1/3 cup fresh cilantro (stems, removed and chopped)
- 1/4 tsp. salt (or as needed)
