So good, this will be my second time making it this month. Its going in my book I keep in my kitchen. My kids loved it. I mixed in brown rice with the kids ground beef.

Yum! Made a vegetarian version by subbing firm seasoned tofu (italian seasoning, liquid aminos, and olive oil) for ground beef. Did not have turmeric, so I used Italian seasoning instead, also added chopped tomato and tomato paste to eggplant and onion. Combined Parmesan with sautéed veggies before baking in oven.
