Description
Traditional cabbage rolls stuffed with beef and rice and served with a sweet-sour tomato sauce are delicious, but they’re also a lot of work. This easy recipe gives you all the cozy flavors of the Polish favorite without the fuss of boiling and stuffing cabbage leaves. Be sure to use lean ground beef so you can skip draining off fat after browning. The recipe, which makes 10 cups, is a Yummly original created by Ivy Manning.

- 1 medium yellow onion
- 1 large carrot
- 3 garlic cloves
- 1 Tbsp. extra-virgin olive oil
- 1 lb. lean ground beef
- 3 Tbsp. tomato paste
- 4 cups beef broth
- 1 can diced fire-roasted tomatoes (14.5 oz., with juice)
- 2 Tbsp. packed brown sugar
- 2 tsp. apple cider vinegar (or red wine vinegar)
- 1 1/2 tsp. dried dill (or 1 1/2 Tbsp. chopped fresh dill, plus more for serving)
- 1 tsp. salt
- 1/2 tsp. ground allspice
- 1/2 tsp. black pepper
- 3 cups green cabbage (chopped)
- 1/2 cup long-grain white rice
- 1/2 cup sour cream (or plain yogurt)

Directions
- Chop onion and peel and chop carrot. Finely chop garlic. Set aside.
- Heat olive oil in a Dutch oven or other soup pot over medium-high heat. Add ground beef, onion, carrot, and garlic. Cook, breaking up beef with a spatula now and then, until the meat is browned, 9-10 minutes.
- Add tomato paste and cook, stirring constantly, until it begins to brown, 1-2 minutes. Add beef broth, diced tomatoes, brown sugar, vinegar, dill, salt, allspice, and pepper. Bring to a simmer.
