- 1 butternut squash (large)
- 50 grams butter
- 1 garlic clove
- salt
- 200 grams feta cheese (crumbled)
- 1 Tbsp. basil

Directions
- Preheat oven to 190C
- Scrub squash. Halve length-ways and scoop out seeds and soft fibres. Put in an ovenproof dish, put a little chopped garlic and small nut of butter in each cavity, brush with olive oil and season well.
- Bake about an hour, until the flesh is very tender.
- Carefully, scoop out soft flesh and juices into a bowl, leaving 1cm flesh. Roughly mash flesh.
- Fold feta and basil into the soft squash, along with salt and pepper. Spoon filling back in, return to oven, bake for a further 15 minutes.
